Why does salad dressing have to be shaken? |

The ingredients that make up the dressings contents will settle as their individual weight relative to another may be lighter or heavier. For instance, oil will float to the top - water is heavier than oil. It's an applied chemistry kind of thing.
Shaking it will mix them for a very short time; to keep them mixed for longer, you need an emulsifier; mustard works well and happens to be a nice ingredient in dressing as well.
