What causes a cake to fall?

There are air pockets in a cake that causes it to rise. When not done or even if done and not cooled enough, the air pockets collapse like popping a balloon. Can also happen if there is too much oil or too little flour because there isn't enough structure to hold the cake up.

Another common cause would be opening the oven too early to check on the cake as the sudden change in temperature will sink your cake.
