Usually, it's intended as either a conversation starter or maybe just an acknowledgement that you're there. How about a simple "good, you?"
It's intended to give someone an opportunity to say something in reply or maybe just hang out or maybe it means nothing.

The general answer to How are you doing is I'm doing fine. How are you? People mainly just ask this to be nice. They might not really know you or actually care how you are doing so if you want to really throw someone for a loop try this... If your having a crappy day just tell the truth. Just tell them you're having a bad day because this and that happened and blah blah blah. Then when they see you again they won't ask you.That is if you would like to stop being asked this question. Otherwise just go with the first response which again is: I'm fine. How are you?

Well.. that depends on how you are doing. Most people like to say "Fine, and you?" ... But if you don't really want to be talking to that person, try saying "Fine, thank you for asking" and walk away...
