As an Employee one is expected to give out certain amount of output as he is paid for this job.For any person when it comes to making payment for anything he will always make a Cost Benefit Analysis.
With respect to the question as to how to explain would be simple as providing the scope which was assigned the time and cost which were put to work and the feed back received for the same.It aids in if there are some concrete evidence or statistics which are not leading to breach of Duty and confidenciality available or else in one to one communication the confidence itself speaks for the person.
It is perfact to mention the same to potencial employer as he has not seen you work and in the small amount of time to Judge a person there is every posible chance of not being able to evaluate another person in total so make use of every available opportunity to communicate your own abilities.
